Mad Cow disease comes from feeding virally infected brains and spinal columns to cows, not cow meat itself.

The cannibal disease you mentioned is called kuru and comes from eating similarly infected brains.

In both cases, it's a naturally occurring disease that is spread more rapidly through the consumption of the infected areas. Cannibalism does not cause disease though it may help to spread it.

Eating human flesh rather than offal is perfectly healthy, though allegedly fattening.

Lots of carbohydrates in it, is there?
