While that's true in the philisophical sense, human embryos are still possessed of either a pair of X chromosomes for females, and an XY pairing if it's male. Even if you can't see whether it's got a winky or not yet, the kid still has a gender.

Technically, for about 3-4 months, the child is a she. The (and I wish I had an audio track of the nurse I had saying this) "little Wee-nie!" doesn't start to grow until the fourth month... or it doesn't grow at all. In the beginning, we are all women.
